Sour Cream Chocolate Cupcakes

It was my turn to bring dessert for neighbor dinner last night and I wanted to make something new...I'm tired of the same 'ol stuff. I found this recipe in my Betty Crocker recipe box...I saved it there probably over a year ago so I decided it was time to give it a try. They were easy and yummy...just a little time consuming...typical cupcakes. I decided to frost them with a pastry bag since it would take me the same amount of time as spreading on the frosting and they look prettier :) Since this made 36 cupcakes and there's only 6 of us....Justin took the rest to work since there was no way we could consume 6 a piece and luckily they were a hit!

Mini "Hershey" Bar Pies

We had a mini neighbor dinner on Wednesday with Michael and Christine so I decided to make mini desserts! Hershey Bar Pie is one of my go to recipes because it is so EASY and FAST. It's pretty much impossible to mess up. I decided to make mini pies since I saw the cute little pie crusts at HEB and I love miniature things!


Ingredients
8 oz of chocolate - I used a 4 oz Nestle Tollhouse Dark Choc baking bar & 4 oz of semi-sweet choc chips
8/9 oz container of cool whip
Pie shell(s)

Directions
Melt chocolate in double broiler (or the microwave I suppose)
Once chocolate is melted mix in with container of cool whip
Spoon into pie shell and refrigerate for 1 hour
Enjoy!

I decided to put ready-whip on the top of the pies and garnish with sprinkles. The whipped cream melted so fast - I never use whip cream so I don't know if this is typical or if it's because I used the low-fat. However, I did get to snap a few pictures before they melted and looked kind of sad - but don't worry...they still tasted yummy!

Vacation in a Cupcake!

Last week it was my turn to make dessert for our neighbor dinner. I was feeling the post-vacation blues so I turned I turned to these Malibu Pina Colada Cupcakes with Lime Cream Cheese Frosting from my handy dandy Sweet Tooth Pinterest board! I think they came out pretty good - they were more dense than a regular cupcake but still tasty!

Tasty Little Dessert

So for Christmas my mom got me this serving tray with soup spoons to use as a serving piece...what a fun idea!! I wanted to use it to make dessert for our neighbor dinner but wasn't sure what I was going to make to put in it. Mansee brought over some FABULOUS brownies on New Years so I decided to try those...well turns out they aren't as good when you cook them in mini muffin pans...but they were still tasty! I thought the presentation was too cute :)
